Creamy Artichoke Dip
Pan-Fried Artichokes
A rustic Spanish dish - Acachofas a la Plancha - makes an excellent tapas dish or a perfect accompaniment to fish dishes. Simply drain and slice the artichokes, then pan-fry for a couple of minutes each side and serve with a squeeze of lemon juice and crushed sea salt. Alternatively, whizz up a lemon vinaigrette and serve this dish as a starter or salad.

Artichoke and Mozzarella flatbreads
As an alternative to a garlic bread or cheesy garlic bread starter, try flavouring flatbreads or baguettes with this crunchy, cheesy topping. Delicious, but mild enough to appeal to children as well as adults. Brush the breads with olive oil, then scatter with finely chopped artichokes and garlic, season then top with grated mozzarella and panko breadcrumbs and grill. These could be made into smaller tapas portions using crispbreads or pitta cut into bitesize portions.

Creamy Artichoke Dip
A tasty dip, served warm with crispbreads. Simply whizz artichokes, ricotta cheese, Parmesan, mayonnaise and jalapeño peppers in a blender. Put the mixture into an ovenproof dish and bake in moderate oven for about 20 minutes until golden. You could also use this dip as a topping for bruschetta.

Baked Artichokes with Breadcrumbs and Parmesan
A delicious vegetarian main, or serve as a side dish with roasted meat or fish dishes. Simply drain the artichokes then layer in a baking dish. Drizzle with olive oil, add crushed garlic and seasoning then top with breadcrumbs and Parmesan. Bake until bubbly and golden.

Feta, Artichoke and Quinoa Salad
Grains such as bulghar wheat, cous cous and quinoa are cost effective and quick to prepare. They make a great base for salads and their nutty flavour works well with the earthy sweetness of artichokes. Toss your prepared quinoa with lemon zest, chopped artichokes, chopped fresh tomatoes and feta cheese. Add a dressing and serve with toasted pitta.
